There need to be at least three identical items in a group for you to eliminate them, but instead of swapping them to achieve that, you just click on the groups when you find them, and when you do so, they get blown up and removed, making room for new items to appear.

On the left side of the screen you see which animals are your targets for that level, and how many of them you need to match, and you also see the number of moves you are granted to do for that stage. Now, the fewer moves you end up using, the more stars you earn in return. Good luck, enjoy!
