The number of arrows you can use per level is limited, so with one shot, you should attempt to bring down as many zombies as possible. One technique you could use is shooting the blocks to make them fall on top of the zombies.
Know that the arrows can also bounce off from walls and change direction mid-flight from that. Try getting 3/3 diamonds per level by doing a really good job at shooting your targets.
